7 fantastic spring cocktails

The lighter nights and the warmer evenings are turning our mind to a little cocktails in the afternoon. We thought we’d put together a list of some of our favourite spring cocktails for your May evenings!

1. The Sunshine

Ingredients

• 2 oz. white rum

• 1/2 oz. vermouth

• 1 oz. pineapple juice

• 1 dash grenadine

Directions

Shake ingredients well with cracked ice, then strain into chilled cocktail glass.

2. The HoneyBee

Ingredients

• 2 oz. white rum

• 1/2 tbs. honey

• 1/2 tbs. water

• 1/2 oz. lemon juice

Directions

Stir honey and warm water in a cocktail shaker until honey is dissolved. Add rum and lemon juice, shake with cracked ice, then strain into chilled cocktail glass.

3. Whiskey Sour

Ingredients

• 2 oz. bourbon
• 2/3 oz. lemon juice
• 1 tsp. superfine sugar

Directions

Shake ingredients well with cracked ice, then strain into a chilled cocktail glass. Garnish with a fresh lemon or orange wedge.

4. Mimosa

Ingredients

• 2 oz. fresh squeezed orange juice

• 4 oz. Brut champagne

• 1 tsp. Grand Marnier (optional)

Directions

Fill a champagne flute 2/3 full with OJ, then top off with champagne. Add Grand Marnier.

5. Kachumber Cooler

2 half-inch slices of cucumber
8 leaves fresh cilantro
2 quarter-inch slices of fresh green finger chili (any medium-mild chili, such as jalapeno or Anaheim can be substituted)
1 3/4 ounce gin
1/2 ounce fresh lime juice
1/2 ounce simple syrup

Muddle cucumber, cilantro, and chili in a cocktail shaker or mixing glass until well broken and slightly mashed. Add gin, lime, and simple syrup and shake vigorously. Strain into a double rocks glass, half filled with ice. Garnish with a slice of cucumber.

6. French 75

  • 220ml gin
  • 80ml sugar syrup
  • Juice of 1 lemon
  • Champagne
  • Lemon zest to serve

Mix the gin with the sugar syrup and the lemon juice. Cover and chill for up to 24 hours until needed. When ready to serve, pour 3cm into champagne flutes (or just over 1cm into coupes), top with champagne and serve with a twist of lemon peel

7. Rhubarb Spritz Fizz

150ml Kamm & Sons

150ml rhubarb syrup

1 bottle Nyetimber Classic Cuvée sparkling wine or prosecco

Divide the Kamm & Sons and 150ml syrup among 6 glasses, top up with fizz, then stir gently.
